Yeah, I gave up the salting of the eggplant years ago. I think it’s better. As for choosing the best melanzane, not just the small ones, but the ones that feel heavy for their size. They have more moisture.

I don’t salt them ahead of time, I will add bread crumbs to the top and extra olive oil and I sauté with garlic, Shallots, s/p and tallow. May add a little olive oil or butter
