manicotti with a vodka meat sauce 🍝  What you’ll need : 	•	EVOO 	•	1lb ground beef or Italian sausage 	•	1/3 cup yellow onion ( I only had a red onion on hand) 	•	4 garlic cloves 	•	Seasoning I used : salt. Pepper, garlic, oregano, trader joes Italian style soffritto(season to your liking) 	•	A jar of Carbone’s vodka sauce + 1/4 cup heavy cream 	•	Manicotti shells ( I used 12) 	•	Mozzarella cheese ( freshly grated)  For the ricotta mixture: 	•	15 oz ricotta 	•	Chopped basil (as much or as little as you want ) 	•	Seasonings ( salt, pepper, oregano, trader joes Italian style soffritto)( season to your liking) 	•	1/2 fresh grated parmesan cheese 	•	1 cup mozzarella (freshly grated) 	•	Lemon zest ( about 1 tsp )  	•	1 egg Directions: 	1.	To a skillet on medium hight heat add in some oil and once heated add in your onions and sauté until softened. Then add in your garlic and sauté until fragrant. (About 30 seconds) 	2.	Add in your ground beef and your seasonings. Once the beef is fully cooked, pour in the vodka sauce and heavy cream.Let it simmer while you prepare the manicotti. 	3.	Cook your manicotti according to package instructions until al dente and drain. 	4.	To a bowl add in your ricotta , chopped basil , your seasonings, lemon zest, 1 egg, parmesan and mozzarella cheese.Mix until well combined. 	5.	Add the mixture to a piping bag. And fill each manicotti shell with the ricotta mixture. 	6.	In a 9.5x13.5 baking dish add a layer of the vodka meat sauce and then add the stuffed manicotti in a single layer. Top with the remainder of the meat sauce and then top with mozzarella cheese and fresh parsley. 	7.	Cover with foil and bake @ 350 for 30 -35 minutes. ( optional broil it on high for a couple of mins - make sure to keep and eye so it wont burn) #manicotti #italian #pasta @CarboneFineFood
