@kirstentibballs: I think I may have a slight obsession with caramelised apples…tis the season! This is my fancier take on an Apple Tarte Tatin with a crisp tart shell, filled with caramel, brown butter mousse and vanilla sponge, topped with beautiful caramelised Envy apples with apple jelly. These are then glazed and finished with chocolate feathers. And yes, I will happily eat these for breakfast. It has fruit in it, after all 😉
