The flavors and textures on this chicken are just unbeatable. The fresh parsley, the salty olives, and the crunchy walnuts make this such a great treat. It is easily going to become one of your new favorite chicken dishes. . Here is how I made it: . 1.First, lets season the chicken. Use whatever cut you like. I went with 2 chicken brst weighing about 1.5lbs and cut them in half into cutlets so they cook evenly and more quickly. Add them to a bowl. . 2.Season chicken with a tablespoon of olive oil, a couple pinches salt, fresh cracked pepper, 1-2 tablespoons oregano, 1.5 tbsp garlic powder, 1/2 tablespoon cayenne or smoked paprika, the zest of 1 lemon and juice of 1/2 lemon. Massage it in so everything is mixed together. Cover and let sit for at least 30 minutes. You can also let it marinate for 2 hours to overnight if preferred. . 3.For the olive topping I roughly chopped 3/4 cup black cured olives, 3/4 cup walnuts, a large handful Italian parsley, the zest of 1 lemon, the juice of 1/2 lemon, a small pinch of salt, and 2 tablespoons GOOD olive oil. Give it a mix, and adjust to your taste. You can play around with these ratios and add more/less of anything you like. . 4.Then just cook up the chicken - you can bake the chicken, airfry it, or pan fry it, whatever you prefer. I just sprayed a pan with oil and cooked the chicken cutlets for about 6 minutes per side (will be longer if you dont cut them down the middle). Time varies by thickness and stove. . 5.Plate up the chicken, top it with as much or as little of the olive topping, then optional, add some crumbled feta on top. .
