What’s For Dinner ? Well, I’m a huge fan of chicken with rice and this recipe just hits the spot! 😮‍💨 All it takes is a couple of ingredients from @Checkers South Africa to make Jamie Oliver’s Spiced Chicken and Rice Tray Bake. Let's go! INGREDIENTS: - 2 red onions - 3 mixed-colour peppers - 8 free-range chicken thighs, skin-on, bone-in - olive oil - 3 tbsp of Cajun-style seasoning - 300g long-grain rice - 4 sweetcorn mini cobs - 2 tbsp. of peri-peri sauce, plus extra to serve - 2 tbsp. of plain yoghurt METHOD : 1. Preheat the oven to 180°C. 2. Peel & quarter the onions, breaking them into petals. 3. Deseed & roughly chop the peppers into chunks, then place it all into a large roasting tray (35cm x 40cm). 4. Add the chicken thighs, drizzle with 1 tablespoon of olive oil and rub everything with the Cajun-style seasoning 5. Roast for 40 minutes. 6. Cut sweetcorn into mini cobs. 7. Season with sea salt and black pepper, add a few shakes of peri-peri sauce, then stir everything together. 8. Cook at the bottom of the oven for 20 minutes, or until the rice and chicken are golden and cooked through 9. Turn the heat up to 200°C and cook for 5 minutes to get a crispy top. 10. Divide between plates (or containers if you are meal prepping), serve with dollops of yoghurt & a few shakes of hot sauce, if you prefer! Enjoy !
