The Ayam Cemani is one of the most expensive chicken breeds in the world. While a standard chick from a hatchery might be priced around $44.99, the price for adult birds or breeding pairs can be staggering. In Indonesia, prized roosters have sold for as much as $4,000, with most adult birds ranging from $1,000 to $2,000. Historically, prices in the West started in the thousands, though they have come down slightly as more breeders have begun to carry them. The secret to this bird's incredible appearance lies in a genetic mutation called fibromelanosis, or dermal hyperpigmentation. This condition causes an excessive development of dark pigment cells throughout the body, resulting in the inky blackness that defines the breed. Despite their dark appearance, their blood is a very dark red, not black. The breed's journey to the rest of the world is a relatively recent chapter. It was first described by Dutch colonial settlers, but it was not until 1998 that the first Ayam Cemani were imported to Europe by a Dutch breeder named Jan Steverink. Today, you can find them in countries like the Netherlands, Germany, Slovakia, and the Czech Republic, as well as in the United States, where they remain a rare and highly sought-after specialty breed.
