Have you tried Japchae? 🇰🇷  Ingredients: 250g dry Korean sweet potato vermicelli (dangmyeon) 250g beef (I used sirloin), thinly sliced ½ red capsicum, sliced ½ onion, sliced ½ carrots, julienned 10-15pc fresh shiitake mushroom, sliced 120g baby spinach 1-2 cloves garlic, sliced 2-3 TBSP neutral oil Salt and white pepper, to seasoning Beef marinade: 1 TBSP soy sauce 2 tsp brown sugar 2 cloves garlic, grated 1 tsp sesame oil Pinch of black pepper Noodle Seasoning: 1 tsp sesame oil 1 tsp soy sauce Japchae Sauce: 3 TBSP soy sauce 2 TBSP brown sugar 2 tsp sesame oil ¼ tsp white pepper Method: 1. Boil large pot of water. Cook sweet potato vermicelli for 6-7 minutes or until tender but chewy. Drain, rinse under cold water, and drain well. Toss with sesame oil and soy sauce to prevent sticking. Cut into shorter lengths if desired then transfer to a large mixing bowl. 2. In a bowl, combine the beef with soy sauce, brown sugar, garlic, sesame oil & black pepper. Mix well & set aside for 10-15 minutes. 3. In a small bowl, mix all japchae sauce ingredients until the sugar dissolves. Set aside. 4. Cook the vegetables separately for best texture. Heat a frying pan or wok over medium-high heat with a little oil. 5. Stir-fry onion, carrot and capsicum separately until just tender. Season lightly with salt & white pepper. Transfer directly into the bowl with the noodles. 6. In the same frypan or wok, cook the mushrooms until softened & lightly caramelized. Season lightly, then add to the noodle bowl. 7. Blanch spinach in boiling water for 30-45 seconds. Refresh in cold water, squeeze out excess moisture, season with salt, pepper drizzle of sesame oil. Add to the bowl. 8. In the same wok or frying pan, cook the marinated beef over high heat until just cooked through. Transfer to the bowl with the noodles. 9. Pour the japchae sauce over the noodles and toss everything together until evenly coated & glossy. 10. Sprinkle with toasted sesame seeds & serve warm. #japchae#japchae #koreang#cooking #food
