@helentaylorrr: my sister saw the white specs and thought it was white chocolate😂😂😂so sorry you’ll need: - 3 ripe bananas - 200g cottage cheese - 3 eggs - 1/3 cup (80ml) maple syrup - 1/3 cup (80ml) olive oil - 1tsp vanilla extract - 250g self-raising flour - 2tsp baking powder (to serve): - greek yogurt - chopped pecans - drizzle of honey (optional) method: 1. begin by placing the bananas, cottage cheese, eggs, olive oil, maple syrup and vanilla extract in a large bowl. using a whisk, begin to simultaneously mash and whisk the mixture together. (alternatively, you can mash the bananas first with a fork but i like the texture). 2. add in the flour and baking powder and whisk until thoroughly combined. 3. transfer the mixture to a lined 900g (2lb) loaf tin and smooth out the top. 4. bake at 180c / 160 fan for 1hour or until golden brown and risen. check if it’s cooked by inserting a skewer all the way through and it should come out clean! if not, loosely cover the loaf with foil and continue cooking. 5. remove from the oven and carefully release the loaf from the tin and peel away the paper. 6. allow to sit for at least 10 minutes before slicing. 7. slice into thick slices and serve with a dollop of greek yogurt, a handful of chopped pecans and a drizzle of honey… enjoy xxx🍌
