@eatinginberlin: Liangfen is popular in North China and Sichuan, especially in the summer as a great cold snack! You need to make this a staple during the warm months and it's even more chill straight out of the fridge. To make the noodles: 100g mung bean starch 200g water to dissolve 1l water to boil For the sauce: 3 tbsp warm water 1/2 tsp sugar 1/4 tsp salt 1 tbsp soy sauce 1 tbsp Chinese black vinegar 1 pressed garlic 1 tbsp chili oil with crisps 1 tsp toasted sesame seeds a few slices of cucumber Enjooooy! #liangfen #easychineserecipes
I was recently diagnosed with Celiac and it never even occurred to me mung bean starch was a noodle option. I’m in.

this looks good but keep in mind I don't think you can qualify something as "anyone can make" if it involves a relatively niche ingredient like mung bean starch. if I can't get it at my local small supermarket in my very small town, then I most certainly can't make it

That sauce goes on everything for me. I just put it on wood ear and tofu and will eat that combo for lunch at work tomorrow. I thought of adding some noodles to make it more hearty but didn’t, so when I come home I’ll pour it on noodles instead cause this inspired me to do so 😂

Is mung bean starch as nutritious as mung beans? Not that it needs to be to enjoy the dish, just curious! Also I thought you put romaine lettuce on top at first, tbh I kinda wanna try it with lettuce now 😅

Quick question: I already have a bottle of regular rice vinegar at home, can I just use it over the Chinese black vinegar or does it change the taste of the sauce too much? :)
