@home.withmadi: Fresh-Milled Cinnamon Mini Muffin Donuts Soft, fluffy, lightly sweet, and toddler-friendly. Makes about 24 mini muffins. Ingredients * 190g soft white wheat berries, freshly milled (about 1½ cups flour) * 1 teaspoon baking powder * ½ teaspoon baking soda * ½ teaspoon cinnamon * ¼ teaspoon salt * 1 large egg * ⅓ cup pure maple syrup * ¾ cup buttermilk * ¼ cup butter, melted and slightly cooled * 1 teaspoon vanilla extract Instructions 1. Preheat the oven to 350°F. Grease a mini muffin pan well. 2. In a medium bowl, whisk together the fresh-milled flour, baking powder, baking soda, cinnamon, and salt. 3. In a separate bowl, whisk together the egg, maple syrup, buttermilk, melted butter, and vanilla. 4. Pour the wet ingredients into the dry ingredients and gently stir just until combined. Don’t overmix. 5. Let the batter sit for 5–10 minutes to allow the freshly milled flour to hydrate. The batter should be thick but easily scoopable. If it’s too thick, stir in 1–2 tablespoons of 2% milk. 6. Fill the mini muffin cups about ¾ full. 7. Bake for 9–12 minutes, or until the tops spring back when gently touched and a toothpick comes out clean. 8. Let cool in the pan for about 5 minutes before removing. Cinnamon Powdered Sugar Glaze Ingredients * 1 cup powdered sugar * 1-2 tablespoons milk or buttermilk * 1 tablespoon melted butter * ½ teaspoon vanilla * ½ teaspoon cinnamon * Pinch of salt Instructions 1. Whisk together the powdered sugar, cinnamon, and salt. 2. Add the melted butter, vanilla, and 1 tablespoon of milk or buttermilk. 3. Whisk until smooth, adding a little more milk a teaspoon at a time until it’s thin enough to drizzle. For the best finish: Let the mini donut muffins cool for about 10 minutes, then drizzle the glaze over the tops. The glaze will set in about 15–20 minutes but still stay soft. #FreshMilledFlour #freshlymilledflourrecipes #wheatberries #minimuffins #toddlermealideas

My husband just surprised me with a NutriMill!! I have wanted one for so long but never bit the bullet. I have hypothyroidism and Hashimotos. I hear so many good things about freshly milled flour and autoimmune diseases. I bake aaalllll the time so this will be a game changer. I’m happy to have found your page!

So do you not have to autolyse when using soft white berries or is it because it’s not bread? Do you only have to autolyse freshly milled flour when making bread because it has to rise?
