#ad Let’s make my take on the classic FIG BARS for this back to routine season ✨ We’re putting a fun twist on the childhood classic snack by using California Grown prunes from Sunsweet for the filling! California grown prunes are full of health benefits and keep you feeling full, making it the perfect snack to grab on those busy days ahead. These are gluten free, vegan and refined sugar free too! 🙌 Ingredients: Crust: - 2 cups oat flour—you can blend oats to create homemade oat flour - 1/4 cup coconut sugar - 1 tsp baking powder - 1/2 tsp cinnamon - Pinch of salt - 1/4 cup applesauce - 2 TBSP melted coconut oil - 3-4 TBSP orange juice plus more if needed - 1 tsp vanilla Filling: - 7-8 oz @sunsweetgrowersinc California Grown Prunes - Juice from half an orange - Orange zest - 1 TBSP honey Directions: - Preheat oven to 350°F - In a bowl, mix together the oat flour, coconut sugar, baking powder, cinnamon and salt - In a separate large bowl, mix together the applesauce, coconut oil, orange juice and vanilla - Pour the dry ingredients into the bowl with the wet ingredients and mix until you form a dough, it shouldn’t be dry or too sticky. If it’s dryer add more orange juice - In a small bowl add the prunes and warm water and let sit for a couple minutes until softened then drain - Add California grown prunes to a blender along with the rest of the filling ingredients and blend - Place dough between to pieces of parchment and roll until you get a long rectangle - Place California grown prune filling in the middle of the dough then take one side of the parchment and fold. Do the same on the other side, like a pamphlet! - Place the log of dough seam side down on a parchment lined baking sheet and cut into about 12 pieces and separate. Bake for 12-15 minutes and let cool! #healthysnack #glutenfree #backtoroutine #snack #snackideas #refinedsugarfree #plantbased #healthysnackideas
