@geraldinebakedgoods: Maple Bacon Muffins 🥓 Happy Muffin Monday! 2 cups all purpose flour 1/4 cup of brown sugar 1 tbsp baking powder 1 cup about 8 cooked pieces of bacon (crumbled) 1/2 cup of maple syrup 1 tbsp vegetable oil 2 tbsp bacon drippings cooled 1 egg 1 cup of milk Maple Glaze 1/2 cup of powdered sugar 3 tbsp maple syrup 1 tsp milk In a bowl sift in powdered sugar, add maple syrup and milk and whisk together until creamy and smooth Add more powdered sugar if the glaze is to thin, add milk if the glaze is to thick Preheat oven to 350F and line muffin tins with parchment paper or cupcake liners In a bowl add flour, baking powder and whisk together and then set aside In a separate bowl whisk together egg and brown sugar Next add the vegetable oil, bacon drippings and milk and mix Then sift the dry ingredients into the wet ingredients and mix with a rubber spatula Next fold the crumbled bacon into the batter (save some bacon crumbs for garnish) Add batter into prepared muffin tins and bake for 20-25 minutes Once muffins are done baking and cooled Dip muffins into the Maple glaze Add bacon crumbles on top and enjoy! #bacon #muffins #bakery #food #recipesoftiktok
