I don’t know why or how it works but I add a pinch of coco powder to my sauce it some how next levels a tomato sauce. 🤷🏼♀️

I learned almost this exact same recipe from my Sicilian SIL.. all but the sugar. I’ve tweaked it since and actually add a teaspoon of apple cider vinegar once it starts simmering. Yum!

I use cottage cheese because not a huge fan of ricotta cheese but how you made yours with spinach I want to try now and that creamy melt cheese I think you said!!
