Preferably bone-in for extra flavor  * 1 pack chicken drumsticks (about 2½–3 lbs) * 10 cloves garlic, minced * 1 cup pitted prunes * 1 cup green olives * ¼ cup capers + a few tbsp caper brine * ½ cup olive oil * ½ cup red wine vinegar * 3 tbsp dried oregano (i was generous!) * 3 tbsp ground cumin * 6 bay leaves * ½ cup packed brown sugar * 2 tsp kosher salt * 2 tsp black pepper * fresh parsley, chopped for the marinade & garnish 👩🏼‍🍳 instructions * In a large bowl or pan, combine the garlic, prunes, olives, capers, caper brine, olive oil, red wine vinegar, oregano, cumin, bay leaves, salt, and pepper. * Add the chicken thighs and drumsticks, coating every piece well. * Cover and marinate overnight for the best flavor. A few hours is okay but the longer it marinates, the better.  * If you marinated in a ceramic baking dish, let it come closer to room temperature before placing it into a hot oven to help reduce the risk of cracking. * If you marinated in a bowl then transfer the chicken and all of the marinade to the baking dish in a single layer. * Sprinkle the brown sugar evenly over the top * Bake at 350°F for 55–65 minutes, or until the chicken reaches an internal temperature of 165°F, spooning the pan juices over the chicken once or twice while it bakes. * Finish with fresh parsley. i love serving this over fluffy rice to soak up every bit of the sauce, but it’s just as delicious over pasta. save this recipe for your next dinner party or cozy night in 🤎 #chickenmarbella #dinnerpartyrecipes #cozycooking #easydinnerrecipe #homecooking
