@karissaastevens: You all know I love grocery store cake mix, however there are a few kinds of cake I do enjoy making homemade. Here is how I make this frosted lemon loaf! Lemon Loaf Ingredients 1 1/4 cups sugar 1 tbsp lemon zest 6 tbsp butter, softened 1/4 cup Crisco 3 eggs 1 tsp vanilla extract 2 tbsp fresh lemon juice 3/4 cup sour cream 2 cups cake flour 1 tsp baking powder 1/4 tsp salt Instructions Add the sugar and lemon zest to a large bowl and whisk. Add the butter and Crisco and mix until light and fluffy. Mix in the eggs one at a time, then add the vanilla and lemon juice. Fold in the sour cream, then add the cake flour, baking powder, and salt. Mix just until combined. Pour the batter into a greased loaf pan and bake at 325 for about 75 minutes, or until a toothpick inserted into the center comes out clean. Let the loaf cool completely before frosting. Lemon Glaze Ingredients 2 cups powdered sugar Juice of 1/2 lemon 3-4 tbsp heavy cream 1/2 tsp vanilla extract Instructions Add all of the ingredients to a bowl and whisk until smooth. Spread the glaze over the completely cooled lemon loaf.
