So I am currently making your sourdough sandwich loaf recipe. Have watched two different videos… In one you bake straight from overnight cold proof, and in the other you let it sit out and come to room temp and do a second rise before baking, which is your preference? I’m wanting the bread to be as soft as possible! Thanks!

I tried this Sunday after watching your video and I could believe it worked! I wasn’t sure about it because I would have let it proof longer just by looking at it. It my bread came out perfect, the rise, the ear, wow!!! Thanks for sharing!!

My dough broke down and just went to bottom of glass of water after hours. It never floated. Not sure what I did wrong. But my loaves still turned out great. 😳

Love this hack, and the fact that somebody I followed anyway for her craziness actually validated this craziness!! Tried it several times prior and dough was perfect every time. I came to the conclusion that I was over-proofing everything I made. I’m kind of a newbie and my bread was always good, but it drove me nuts that I couldn’t repeat it every time. I was a chemist for 35 yrs so I want it to be…and it never was. After 4 bakes, I’m convinced too. Now, I can’t wait to try Step 2 float. 🙂

I take it a step further. I temp my dough and then make my water the same exact temp :)
