To describe it a bit more like a horse person, a dairy cow uses all its excess energy to make milk. It has been bred over many generations specifically for this purpose. Beef cattle are bred to put on weight. One may compare the lean muscles of an Arabian or thoroughbred with the beefy weight of a stock horse and see how metabolics differ in horses, as well. The closest most folks in the US will get to a natural bovine would be longhorns…they have a leaner more natural feed to weight ratio but lack the skeletal appearance of dairy cattle.
