Mix sauce ingredients in a bowl. 4. Thread chicken and leeks onto 4~5 skewers, pressing meat flat against the board. 5. Pan-fry skewers in oil, covered, over medium heat, then flip and repeat. 6. Cook uncovered to get the chicken browned, and set aside. 7. If too much oil is left on the pan, wipe it. Simmer sauce until thickened, then return skewers to coat. 💡 KEY POINTS: - In this recipe, we're swapping traditional Sake and Mirin for white wine and sugar in a certain conversion formula. I think this would be better if you did it under the broiler of an oven, this would also make it easier to glaze it multiple times to get the flavour and texture closer to traditional
