When the Levite priesthood was on their exile in Babylon, they got the "brilliant idea" to make Yahweh, the former Storm and War god from Edom, into "the only god in universe". Then they immediately had made a problem. A supreme being needs a creation of earth story. They did not have one. To write this story they took ideas, images, and concepts that were already widespread in the surrounding civilizations of Mesopotamia, Canaan, and Egypt. For example: The creation of a solid dome separating upper and lower waters was standard Mesopotamian cosmology. To make the text look ancient they used the word "Elohim", which is a plural noun meaning "gods". The text indicates it is the old Canaanite creator god El that is talking to his pantheon of gods (which Yahweh once was a member of as a lesser god): "Let us make mankind in our image, in our likeness." So, Genesis 1 is just a patchwork of already existing ideas they slapped on as the new beginning of Hebrew bible – before the old Genesis 1 – where Yahweh is crawling in the dirt making a clay doll (which they also stole from the Akkadian myth Atrahasis).

More than 1 god is not logical. If a god is eternal and unchanging in order for there to be two it would need to have something different or lack from the other god that makes it distinct from the other. And missing perfection. Therefore no longer rendering it god.
