@isaiahcooksmeat: Skirt Steak 🥩🔥 Skirt steak is another one of those cuts that is insanely underrated over here in Australia 🥩 It’s very popular over in the USA & South America, typically marinated & grilled hot and fast. Perfect to eat by itself or but is also a top tier sandwich / taco meat 🔥 Here’s exactly how I prep & cook my skirt steak ⬇️ - 1 skirt steak - 125ml soy sauce - 100ml oil olive - Juice of 1 lime - 3-4 garlic cloves - 10g ginger grated - BBQ rub 1. Make the marinate & marinate the meat for 3-4 hrs 2. Leave the excess marinate on & season the steak (I used @coastnsmoke winki-pop dust) 🔥 2. Set your grill up for 2 zone cooking - coals on one side, nothing on the other 3. Grill the skirt steaks hot & fast continuing to flip every 30 seconds for even cooking & crust 4. At 45c internal pull & let rest for 5 mins 5. Slice into smaller steaks with the grain then slice against the grain to serve For the smoked chimichurri 🪴 - 125 ml olive oil - Handful parsley - 4-5 Garlic cloves - 25ml red wine vinegar - Salt & pepper & red pepper flakes to taste 1. Finely chop the parsley, garlic 2. Add the chopped ingredients to a bowl along with salt, pepper & red pepper flakes 3. Add the red wine vinegar & mix well 4. Add the olive oil & mix well 5. Optional - add a piece of hot charcoal, close the lid and let it sit for a few minutes to add a smoky flavour PS: mad shoutout to @paddocktotable for stocking & Serling full length skirt steaks 🫶🥩 you guys are the best!
