Tropical Mango-Pineapple Coleslaw
Crisp, juicy, lightly sweet, and zesty — perfect for hot days, fish tacos, grilled shrimp, or backyard barbecues. No heavy mayo overload.

Ingredients
Slaw
• ½ small green cabbage, thinly shredded
• ½ small red cabbage, thinly shredded
• 1 large ripe mango, peeled and cut into thin matchsticks or small cubes
• 1 cup fresh pineapple, diced (or well-drained canned)
• 1 large carrot, shredded or julienned
• ½ small red onion or 3–4 green onions, thinly sliced
• ½ cup chopped fresh cilantro
• Optional: 1 small jalapeño, seeded and minced (for a gentle kick)
• Optional crunch: ¼ cup toasted coconut flakes or chopped macadamia/cashews
Dressing
• ⅓ cup mayonnaise (or Greek yogurt for a lighter version)
• 2–3 tablespoons fresh lime juice (plus zest of 1 lime)
• 1 tablespoon honey or agave
• 1 teaspoon rice vinegar or apple cider vinegar
• ½ teaspoon grated fresh ginger (optional but excellent)
• Pinch of salt
• Pinch of chili powder or cayenne (optional)
Method
1. In a large bowl, toss together the cabbages, mango, pineapple, carrot, onion, cilantro, and jalapeño if using.
2. Whisk the dressing ingredients until smooth. Taste and adjust — more lime for brightness, more honey if you want it sweeter.
3. Pour the dressing over the vegetables and fruit. Toss gently but thoroughly so everything is lightly coated.
4. Taste and season with a little more salt or lime if needed.
5. Chill for 15–30 minutes (or serve right away). Just before serving, sprinkle with toasted coconut or nuts if you like extra texture.
