For those unfamiliar with normal carbonara, apart from adding garlic confit, this recipe also makes the following changes to the traditional recipes: (1) Swap guanciale for pancetta, (2) Add butter, chilli, parsley, (3) Use much much less black pepper, (4) Some of us don't salt the water for this dish as carbonara is already fairly salty, (5) Instead of adding spaghetti to the pan with the meat for a moment and then adding the sauce, add the meat into the sauce and then the pasta.
