@edka_1213: Char Siu (Chinese BBQ Pork) Ingredients 2 lbs (900 g) pork shoulder or pork collar, cut into long strips Marinade 3 tbsp hoisin sauce 2 tbsp honey 2 tbsp light soy sauce 1 tbsp oyster sauce 1 tbsp Chinese cooking wine (Shaoxing) (or dry sherry) 1 tbsp brown sugar 1 tsp sesame oil 1 tsp five-spice powder ½ tsp white pepper 3 cloves garlic, minced 1 tsp grated fresh ginger ½ tsp red food coloring (optional, for the classic color) Glaze 2 tbsp honey 1 tbsp hoisin sauce 1 tbsp reserved marinade (boiled first) or water Instructions Pat the pork dry and place it in a large zip-top bag or bowl. Mix all the marinade ingredients until smooth. Pour the marinade over the pork and coat well. Marinate for at least 8 hours, preferably overnight. Preheat the oven to 375°F (190°C). Line a baking tray with foil and place a wire rack on top. Arrange the pork on the rack. Roast for 25 minutes. Flip the pork and roast for another 15–20 minutes. Mix the glaze ingredients. During the last 8–10 minutes, brush the pork generously with the glaze 2–3 times, allowing each layer to caramelize before adding the next. For extra char, broil for 1–2 minutes, watching carefully. Rest the pork for 10 minutes, then slice and serve. Serve with Steamed jasmine rice Noodles Steamed bao buns Stir-fried vegetables Fried rice Tip: Brushing the glaze only during the final minutes gives Char Siu its signature glossy finish and caramelized edges while keeping the pork juicy inside.
