Glutenous Rice Flour 1/4 C. Sugar 3/4 C. Water 1 tsp. Vanilla Food coloring (optional) Cornstarch (for dusting) Start by preparing ice cream, and keep frozen until ready to use. In a microwave safe bowl mix together flour, sugar, water, vanilla, and food coloring and mix well until smooth and no lumps remain. Cover and microwave for one minute. Mix, cover, and microwave another minute. (The mochi mixture should be thicker each time you microwave it). Mix the mochi mixture again by folding over itself. Cover, microwave for 30 seconds, mix, cover microwave 30 more seconds, and mix once more. Dust a plate with cornstarch, dump mochi mixture on top of that and top with more cornstarch, allow to cool enough to handle about 10 minutes. Cut mochi into equal portions, shape the mochi dough by flattening a bit then add ice cream and pull the edges of mochi dough up around pinching/twisting to seal it off; rolling mochi ice cream ball around in cornstarch before putting it back in the freezer. Repeat this process with the remaining mochi dough. Freeze Mochi Ice Cream for about 1 hour before eating. If you like ice cream you’ll like this mochi ice cream it’s so yummy.
