You got the wrong cheese. I used to work at Taco Bell. And we called the pizza cheese because it’s the same cheese that goes on the Mexican pizza. It’s a mix of mozzarella cheddar and Monterey pepper jack 🥰

Back in the 80s when I worked at Taco Bell, I remember when the Mexi melt came out. I remember us practicing making them for the president of Taco Bell that was visiting at that time. I always liked Meximelts.

You people are using too large of tortillas and too much filling. Less is more with the Mexi melt. 6” tortillas, 1oz meat, 1.5oz cheese and tablespoon of pico. You’re welcome.
