@sarahhhhale: Thanks for making this with us!!! 🥹❤️ Been a while since I’ve had the energy for these, so this one felt extra special.🥰 Chicken Scallopini 🍋🍗 • 2 boneless, skinless chicken breasts, butterflied & lightly floured • 1 clove garlic, pressed • ¼ cup butter • 4 oz sliced mushrooms • 20 capers (or to taste) • 2 tbsp lemon juice • ¼ cup white wine • 2 tbsp chicken demi-glace (or substitute a little chicken broth + cornstarch slurry) • Fresh parsley • Lemon slices • Salt & pepper Cook the chicken in the butter until golden (about 6–8 minutes per side). Remove, then sauté the mushrooms in the same pan. Stir in the garlic, capers, lemon juice, white wine, and demi-glace.
