Um. I am a chef for a long time and had a good palate. I could smell if something was off before seeing or tasting it. The parm will sour after awhile of being stored. Depending on her storage methods. Parm is okay to freeze without sacrificing all of its dignity. I suggest not cubing it up for a shark-oochi board but ok for grinding and sprinkling on pasta
