Coffee Fizz mezcal, lemon, whey, coffee, soda The Coffee Fizz from Handshake Bar in Mexico City is a delightful concoction that combines the rich flavors of mezcal and coffee. If you've ever had the pleasure of indulging in this drink, you'll understand why I was instantly inspired to recreate it. Fortunately, I stumbled across a video by @Barchemist , as well as a interpretation of the recipe by Proofnote. The first step is to clarify the mezcal and lemon. This process helps to remove any impurities and create a smooth base for the infusion. Then, infuse the clarified mezcal and lemon with whole coffee beans. This infusion imparts the taste of coffee, while continuing to keep the milk punch’s color. The combination of whey and coffee oils in the infused mixture creates a natural foam. This foam is not only visually appealing, but it also adds a velvety texture to the drink.  Halfway through the process I wanted to see the impact different coffees have on the overall flavor. I chose a Oaxacan medium roast and a Ethiopean light roast. At the end of the day, the  Oaxacan won- providing enough oil and body and actually tasting like “coffee”, while the Ethiopean was less coffee like and more like a fermented tea. Definitely a profile to look at for the future, but the medium roast Oaxacan works best. 200 ml mezcal 100 ml lemon juice 50 ml 2:1 rich syrup 90 ml milk 35 g coffee beans (says 17g in the video but thats for one batch during the coffee experiment) Combine mezcal, lemon juice, and syrup in one vessel, then pour into a separate vessel filled with the milk. Let sit for 30 minutes, then filter it out using a cheesecloth or coffee filter. Liquid will run cloudy for a few minutes, then clear. Once its clear, change to another clean vessel, and pour the cocktail through the filter again. Once completed, add 35 g of coffee beans to the mix and let sit overnight, then strain and reserve. To serve, add 60 ml | 2 oz of punch to a shaker with ice, and shake until cold. In a rocks glass with ice, add 45 ml | 1.5 oz soda to glass, then pour punch over soda. #fyp #mezcal #coffee #milkpunch
