Chicken Involtini As kids, we didn’t just watch Mama cook. we were right there in it with her ❤️. Standing too close to the counter, hands dusted in flour, laughing as she pounded the chicken and rolled it up right in front of us like it was a game. She’d hound the chicken with that mallet, dramatic as ever, then look at us and smile, inviting us to try, guiding our hands with hers 🥰, turning a simple task into something full of love and laughter. Prepare the onion, garlic, and mushrooms and set aside. Butterfly and pound the chicken to ¼-inch thickness. Season both sides with salt and pepper. Place 1–2 parsley sprigs, a slice of mozzarella, and a slice of ham on each piece. Roll tightly and secure with toothpicks. Season the flour with salt and pepper, then lightly dredge the involtini, shaking off excess. Heat a large pan over medium-high heat. Add olive oil and half the butter. Sear the chicken in batches until golden on all sides. Remove and set aside. Lower heat to medium-low. Add onion and garlic, adding a little oil if needed, and sauté for 2 minutes.
