Bahan: - 500 gr jengkol tua, belah dua - 1 liter air, untuk merebus - 5 lembar daun salam - 2 batang serai, geprek - 3 cm lengkuas, geprek 500 ml air, untuk kuah - 5 sdm kecap manis - 1 sdm gula merah, serut - 1 sdt garam - 1/2 sdt merica bubuk - 2 sdm minyak untuk menumis Bumbu halus: - 8 butir bawang merah 4 siung bawang putih - 3 butir kemiri, sangrai - 1 sdt ketumbar - 1/4 sdt jintan - 3 cm jahe Cara: 1. Rebus jengkol dengan 1 liter air, daun salam, 1 batang serai, lengkuas. Rebus 30-40 menit sampai empuk. Buang airnya, cuci bersih, geprek tipis. 2. Haluskan semua bumbu halus. 3. Tumis bumbu halus sampai harum dan matang, masukkan sisa serai. 4. Masukkan jengkol, aduk rata dengan bumbu. 5. Tuang 500 ml air, tambah kecap manis, gula merah, garam, merica. Aduk. 6. Masak dengan api kecil 20-30 menit sampai kuah mengental dan bumbu meresap. Koreksi rasa. 7. Sajikan hangat dengan bawang goreng. Tips: - Pilih jengkol tua biar lebih pulen.
