For the sauce, melt butter in a pan and sauté the chopped carrot, celery root, and leek until they are soft.  6. Add 3/4 cup of beer to the pan and let it cook until the beer has mostly evaporated and the vegetables begin to roast. Pour in more beer and continue cooking until the sauce reduces.  7. Add the pork broth and the saved juice from the baked pork knuckles. Simmer for about 30 minutes, then add the cornstarch slurry to thicken the sauce. 8. Bake the pork knuckles at 200°C (392°F) for about 15-20 minutes, then switch to the grill setting for an additional 5 minutes. Keep a close eye on them to prevent the skin from burning. 9. Serve the pork knuckles with dumplings and pickled cabbage. Enjoy!
