Take the steak out of the fridge 30 minutes before cooking and season with salt and black pepper. 2.	Heat olive oil in a frying pan over high heat. Sear the steak for 2-3 minutes per side for medium-rare (adjust for thickness). Add butter, thyme, and crushed garlic, then baste for another minute. Rest for 5-10 minutes. 3.	In a separate pan, melt butter over medium heat. Add garlic and sauté for 30 seconds, then add spinach and cook until wilted.
