@theknottygarden: 🧄 Garlic Scape Sea Salt Recipe 🧂 Garlic scapes are the curly green flower stalks that grow from hardneck garlic plants. When you grow hardneck garlic, like this Russian red garlic, you essentially get to harvest in one! Preserve the punchy, garlicky goodness of scapes with this simple recipe—perfect for sprinkling over everything from grilled veggies to scrambled eggs. A summer staple you’ll want to keep around all year. Ingredients: 1 cup garlic scapes, finely chopped 1 cup sea salt (fine, flaky, or coarse—your choice) Instructions: Trim and roughly chop your garlic scapes. Add them to a food processor or blender and pulse until finely minced. Add the sea salt and pulse just a few more times to combine—don’t overblend if you’re using a delicate salt! Spread the mixture in a thin, even layer on a parchment-lined baking sheet. To Dry: Best method: Air-dry outdoors in a shady, well-ventilated spot. Avoid direct sun to preserve flavor and color. Indoor option: Dry in your oven on the lowest temp setting (under 170°F / 75°C if possible). Heads-up: your house will smell like garlic for days—plan accordingly! Drying time varies from 36 to 72 hours. Stir occasionally to speed things along. Once the mixture is fully dry and crumbly, break up any clumps and (optional) pulse briefly again to even out the texture. Storage: Store in an airtight jar in a cool, dry place. Keeps for MANY months—if it lasts that long. 😉 ✨ Pro tip: Use on grilled corn, tomatoes, avocado toast, or homemade focaccia. Also makes a beautiful edible gift. My favourite way to use it is on homemade kale chips! Stay tuned for my next outdoor cooking class! 🌸Erin
