He didn’t know Katara’s name, he only refers to them by their names after learning it. He’s very clever about it too. He learnt katara’s name in southern raiders from sokka when he refers to her as ‘’your sister’’ and sokka corrects him by saying her name. After that he uses her name

I think it’s hilarious but it also shows a lot about Zukos character. I think he never wanted to know their names because humanizing them would make it harder for him to do what he needs to do. That’s the same mindset that got him banished in the first place and he tried to make himself something he wasn’t for ozais approval

He most likely knew aangs name but never really respected him or thought a name was important. Katara was always yelling “AANG” to aang around zuko. There’s even a scene where he acknowledges aangs name —- katara:AANG -Zuko:the avatar is coming with me

He learns their names when he officially joins the team. Aang calls everyone by name directly when he asks their opinion and then katara says Aangs name to zuko when she threatens him.

that's also why he failed. he never learned anything about them apart from how they fight to a degree. this also explains why Iroh was such a war lord, he took time to know the people he was fighting. he developed defensive fighting styles by learning about the water benders. he nearly conquered bah sing se because he learned how the earth benders lived and interacted to certain things. even when he meets tooth for the first time he gets into a deep conversation with her instead of staying on a surface level. the art of war, know your enemy. the same applies for Azula but in a twisted manner (and she was the one who finally conquered bah sing se).
