Cook the pasta with the stock cube for 8-10 minutes until al dente, reserving 100ml of the pasta water before draining. 2. Heat a pot on medium heat with oil. Add onion and garlic and fry for 5 minutes. Then, add the chicken and fry for another 5 minutes. Season with smoked paprika, Italian seasoning, salt and pepper. Cook until golden and cooked through. 3. In a blender, add the roasted peppers, cottage cheese, Parmesan, garlic, tomato purée and reserved pasta water. Blend until completely smooth. 4. Pour the sauce into the pot along with the passata, sugar and simmer for 5-10 minutes. 5. Stir in the spinach until wilted. 6. Add the cooked pasta and toss until coated in the creamy sauce. 7.
