OVEN BAKED CRISPY COD (GF / DF) ✨ Crispy oven baked cod with a tangy tartar sauce will always be a winner in my book. This is one our whole family loves with a simple side of rice and some veg. We’re only using two bowls for dredging to cut down on dishes and prep time and to ensure maximum crunch on that nicely golden cod. It’s giving fancy fish sticks and I am here for that! I like to blitz my panko in a blender until it’s fine like a flour consistency before making my bread crumb. Add panko to a medium sized bowl along with Italian seasoning, garlic powder and 1 tsp salt and mix well.  Add egg to a separate bowl and whisk well.  Season fish with salt then dredge in panko. Shake off any excess crumb then dredge in egg. Let excess egg drip off and transfer back to bowl with panko and dredge once more. Shake off any excess panko and transfer to baking rack.  Repeat with remaining cod filets. Spray fish generously with cooking spray, this will help the fish get crispy and golden in the oven.  Bake for 13-15 minutes until cooked through.  Optional, stick under the broiler for final two minutes to get a deeper golden color.
