@kellyscleankitchen: How to make a delicious, healthy chickpea salad sandwich ⬇️ I have been having these non-stop for my lunches this summer and absolutely loving them for how easy and delicious these are. For my bread I rotate between @Food For Life gluten free brown rice bread and their 3 seed bread. I love how they prioritize health and are great fuel to get me through the day. Check out @Foodforlifebaking for this gluten free sandwich bread, and see the recipe below for my chickpea salad sandwiches! Ingredients: 1. Food For Life GF brown rice bread or 3 seed bread 2. 1 Tbsp butter for toasting 3. 3 cups canned chickpeas, drained and rinsed 4. 1 apple, diced 5. 1/4 cup red onion, diced 6. 1/2 cup pecans, chopped 7. 1/2 cup raisins 8. 1/4 cup dill, chopped 9. 3/4 cup mayo 10. 1/4 cup dijon mustard 11. Salt and pepper to taste 12. Lettuce for the sandwich  Instructions: 1. Toast the bread for the sandwiches. Use a toaster, or on a pan over medium heat melt the butter. Once bubbling, add the bread and toast for 1-2 minutes per side, until golden brown. Set aside 2. Make the chickpea mixture. Mix the remaining ingredients together in a bowl, the chickpeas, apple, red onion, pecans, raisins, dill, mayo and mustard. 3. Take half of the chickpea mixture and add to a food processor. Pulse a few times until a rough paste is formed. 4. Add the mixture back to the other chickpeas and mix to combine. Season with salt and pepper to taste. 5. Make the sandwich.
