Ingredients * 1 large ripe banana * 2 large eggs * 2 tbsp plain yogurt (30 g) * 1 tbsp avocado oil or melted butter (15 ml) * 1 cup oat flour (95–100 g) * 1 tsp baking powder * 1/2 cup fresh blueberries (70–80 g) Instructions 1. Preheat your oven to 350°F (175°C). 2. In a ceramic baking pan or a mixing bowl, mash the banana until smooth. 3. Add the eggs, yogurt, avocado oil (or melted butter), oat flour, and baking powder. Mix just until combined, don’t overmix. 4.Add the blueberries and gently fold them into the batter. 5. Bake for 28–32 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. 6.
