Load the Instant Pot Place the frozen beef roast directly into the pot. Add beef broth, onion quarters, sliced bell peppers, minced garlic, salt, and pepper. 2. Pressure Cook Seal the lid and set the Instant Pot to High Pressure for 75 minutes. Allow a natural release when finished (about 15–20 minutes). 3. Make the Gravy Mixture In a small bowl, whisk together cold water, cornstarch, and the packet of brown gravy mix until smooth. 4. Thicken the Sauce Turn the Instant Pot to Sauté mode. Slowly stir in the gravy mixture. Cook for 3–5 minutes, stirring occasionally, until the sauce thickens. As you stir, the beef roast will naturally fall apart into tender pieces. 5. Serve Spoon the beef and pepper mixture over mashed potatoes. Garnish with peperoncini peppers for a tangy finish. --- Tips: For extra richness, you can add a splash of heavy cream or a spoonful of sour cream when thickening the gravy.
