In Marvel, a spell can be anything and mean anything. This handshake was their symbolic act of being best friends. Doing it constantly was an affirmation of their bond, strengthening the meaning of the act over time. With Ned having innate magic talent, It was this simple act that broke the memory spell, as all spells can be broken and they get weaker over time if they are not reapplied every once in a while.
