Whisk egg yolks in a bowl with ¼ cup sugar and cornstarch. Slowly whisk in about 1 cup of hot milk mixture, then whisk everything back into the pot. Cook on low heat, stirring constantly, until slightly thickened and coating the back of a spoon. It should reach 170–175°F. Do not boil. Remove from heat and stir in the heavy cream and vanilla. Chill the prepared base completely in the fridge for at least 4 hours or overnight. Pour into the Cuisinart Ice Cream Maker Machine and churn for 20 to 30 minutes, until it reaches the consistency of a thick soft serve.
