Instead of physical pendulums, these computers use mathematical algorithms. They calculate the changing local gravity vector and apply "transport rate" corrections to subtract the Earth's rotation and account for the vehicle moving across a curved surface.

No wrong information thats not correct at all. A plane does not need to ajust a plane is literally gliding over the air pressure at the set altitude. So it does it by it self by physics

Gathering data on what? It reads air pressure and the pitch / roll / yaw of the aircraft. It has nothing to do with reading the ground.

„Level” is determined by the aircraft's relationship to local gravity and the aerodynamic forces, not by keeping the fuselage parallel to a single straight line extending from the starting point.
As the aircraft travels, the local vertical changes with the curvature of Earth. The aircraft naturally follows that changing local vertical while maintaining altitude.
At typical cruise speeds, the required curvature-following acceleration is tiny. For example, at 900 km/h, following Earth's ~6,371 km radius requires only about 0.0031 g of centripetal acceleration—far too small to mean the aircraft visibly points its nose downward.
