@thebigleybasics: These homemade Mint Chocolate Chip Klondike Bars are gluten-free, dairy-free, paleo-friendly, and refined sugar-free—plus incredibly delicious.🤤 Mint Ice Cream •1 (13.5-ounce) can full-fat coconut milk •1 cup raw cashews (or ½ cup cashew butter if you don't have a high-speed blender) •⅓ cup pure maple syrup or raw honey •⅓ cup fresh organic mint leaves (or about 1 teaspoon pure mint extract, though fresh mint provides the best flavor) •¼ teaspoon pink Himalayan salt •Small handful of fresh organic spinach leaves (optional, for a brighter green color) •½ cup dark chocolate chips or chopped dark chocolate (I use dairy-free and refined sugar-free chocolate) Chocolate Shell •10 ounces dark or semi-sweet chocolate (I use dairy-free and refined sugar-free chocolate) •2 tablespoons coconut oil Instructions 1. Add all of the mint ice cream ingredients, except the chocolate chips, to a high-speed blender. Blend until smooth and creamy. Add the chocolate chips and pulse for a few seconds to break them into small pieces. 2. Line an 8 x 8-inch pan with parchment paper. Pour the ice cream mixture into the pan and spread it into an even layer. Freeze until completely firm, at least 8 hours or overnight. 3. Once the ice cream is frozen, prepare the chocolate shell. Melt the chocolate and coconut oil together in the microwave or in a double boiler over the stovetop. 4. Remove the ice cream from the freezer and lift the frozen ice cream slab out of the pan using the parchment paper. Cut into 16 squares. To keep the bars from melting, leave half of the squares in the freezer while coating the others. 5. Once the melted chocolate has cooled for a few minutes, coat each frozen ice cream square in the chocolate. Place the coated bars on a parchment-lined baking sheet or tray. 6. Return the bars to the freezer until the chocolate shell is completely set. 7. Once set, dig in and enjoy!
