every babcia has cooked for us since we can remember…so now it’s my turn!🍋 (for the lemon & cottage cheese pancakes) you'll need: - 100g twaróg cheese (you can use regular cottage cheese, but you may need a little more flour!) - juice & zest of 1/2 a lemon - 2tbsp honey / sugar - 1 egg - 3/4 cup flour (add more or less depending on the cheese of choice) - 1tsp baking powder - a little milk if it's too thick! - 2tbsp butter for frying (for the blueberry chia jam): - 1 cup blueberries (frozen / fresh) - 2tbsp honey / sugar - juice of 1/4 of a lemon - 1.5tbsp chia seeds (to serve): - greek yogurt method: 1. begin by mixing together the cheese, lemon juice & zest, egg, honey (or sugar), flour and baking powder in a shallow bowl until thoroughly combined. 2. add a little milk if it's too thick but make sure it's not runny enough to fall off the spoon easily. 3. melt 1tbsp of the butter in a medium sized frying pan and place about 2 heaped tosp of pancake batter for each pancake onto the pan. 4. make sure the heat is on medium as you don't want the pancakes to brown too quickly - they need a little longer to cook as they are quite thick! 5. meanwhile, you can begin the jam by placing the blueberries, lemon juice, honey (or sugar) and chia seeds in a small pan. place on a medium heat until the berries begin to thaw. 6. lower the heat and cook them slowly, whilst stirring - until they become jammy. 7. after the pancakes are nice and golden on 1 side, carefully flip over and cook for another few minutes until golden. 8. remove from the pan and repeat with the rest of the batter. 9. keep stirring the jam to ensure it doesn't stick! 10. once all the pancakes have been cooked, stack in pairs of 2 (or 4!) and top with a dollop of greek yogurt. 11. carefully spoon over the warm blueberry chia jam over the top… enjoy!🍋🫐🤍 #polish #pancakes #cottagecheese #breakfastrecipes #yogurt
