Hot Honey Tenders 🌶️🍯 I didn’t know what all the hype was about… but I guess I understand it now. Sweet, sticky and spicy🥵 These went ridiculously well with the mac & cheese. Ingredients 1kg Chicken Tenders Marinade: 2 tbsp Paprika 1 tbsp Smoked Paprika 2 tbsp Onion Powder 2 tbsp Thyme 2 tbsp Celery Salt Salt 300ml Buttermilk 100ml Hot Sauce Flour Dredge 900g Self-Raising Flour 100g Potato Starch 2 tbsp Celery Salt 2 tbsp Thyme 2 tbsp Paprika 1 tbsp Garlic Powder 1 tbsp Onion Powder Salt Hot Honey 200g Butter 100g Honey 1-2 Garlic Cloves, grated 1½ tbsp Paprika 1½ tbsp Chilli Powder Zest of 1 Lemon Juice of ½ Lemon Salt MSG Method 1️⃣ Marinate the chicken with all of the marinade ingredients for as long as possible. Overnight is best if you’ve got the time. 2️⃣ In a large bowl, combine all of the flour dredge ingredients. Fill a separate bowl with ice-cold water and have a tray ready for the coated chicken. 3️⃣ Remove a tender from the marinade, letting the excess drip off. Coat it in the flour for 1-2 minutes, shake off the excess, dip it into the ice-cold water, then back into the flour. Press the flour into the chicken for another 1-2 minutes to build that crispy, craggy coating. Place onto the tray and repeat with the remaining chicken. 4️⃣ Leave the coated chicken to rest for 10 minutes while you make the hot honey. 5️⃣ Melt the butter over a medium-low heat. Add the grated garlic and cook for 1-2 minutes until fragrant. Stir in the paprika and chilli powder, then once the butter starts to foam, add the honey, lemon zest and lemon juice. Season with salt and MSG to taste. If the butter separates slightly, just give it a good stir before coating the chicken. 6️⃣ Heat your oil to 165°C and fry the chicken for around 5 minutes, or until the internal temperature reaches 75°C. 7️⃣ As soon as the chicken comes out of the oil, season lightly with salt before tossing it in the hot honey while the sauce is still warm. Try not to bite into one straight away… I can’t be responsible if your taste buds get fried because you had absolutely zero self-control. 🌶️🔥 #fyp #hothoney #friedchicken
