Qalia or Marlo (قليه او مقلي) @canarybasmati Ingredients: - 2 kg lamb pieces (bone in & boneless) - 1 tbsp black pepper - 1 tsp coriander powder - 1 tsp cumin powder - 1 tsp cinnamon powder - 1 tsp cardamom powder - salt to taste - 2 cups @canarybasmati - 1 tbsp ghee - 1 tbsp chicken stock powder - honey - place the meat in a cold pot and add all the seasonings without the salt ( cooking the meat without the salt makes it cook much faster) - place the pot on high heat and let the meat release its juices while stirring a bit. ( 5 minutes) - once the meat has released its juices. Cover the pot and drop the heat to medium and let it cook for about an hour. - keep an eye on the pot and check it once in a while. Once the juices have evaporated and you’re left with the rendered fat. The meat will confit and fry in its own fat. - wash and soak 2 cups of @canarybasmati then add it to a pot with a spoon of ghee salt and spices. - add 2 cups of water then let the pot boil for about 6-7 minutes. Drop the heat to a simmer cover and let it cook for 15 minutes. - once the rice is ready. Drop it on a serving plate. Top it with the lamb pieces. A drizzle of honey and enjoy.
