Yes!! This also works when your trying to do dark colors . Microwaving buttercream with your food color will intensify the color without adding so much food coloring . ✨

Unfortunately I’m only ever baking 1 cake at a time, filling my mixing bowl to the brim like in the video would give me multiple cakes’ worth of buttercream. It does prevent air bubbles though.

You absolutely don’t have to do this, you can just make sure your buttercream FULLY covers your paddle so that it doesn’t incorporate additional air, and literally just let it beat on low for like… 20 minutes. The only time you might need this is during the winter because the ambient temp in your kitchen may be too cold to let the butter get to this consistency.

Remember potions are the key. Home bakers can still use this method. I think about 5-10% would be the perfect sweet spot for smaller batches.

Ive tried this - SMBC…and then it was very difficult to use for decorating…. would not come back stable. but I am in a hot climate… tried decorating in a/c room but didn’t help. Also ppl say immersion blender gets the air bubbles out. This makes it worse to me

I’m definitely trying this - the liquid goes into cold solid buttercream!!! I’ve ended up w curds for some reason before I will retry this method. How do you get it so white? I tried the violet method that did not work for me
