I have so many high end knives. I have a 9” Dexter that sits in a knife block and is my absolute work horse. It’s used more than any knife on my magnet strips. It’s soft steel, easily honed and easily sharpened. I paid $20 for it like 15 yrs ago.

My first chefs knife I got was a personalised knife that I had a blacksmith make, high carbon blade, pain in the ass to maintain but I’ve treated it well and it’s still as sharp as day 1. The guy was class and designed it exactly the way I imagined it and it only cost me £180
