Fun fact, if you microwave your onions for a brief period of time before sautéing them, caramelization happens much faster because you evaporate some of the liquid in them

chef here. the trick to caramelizing onions quickly is a stainless steel pan and letting them sit till you get a good fond in the bottom. hope this helps
