Viral Crunchy Pasta Salad 🤤🥗 If you’ve never air-fried pasta… just trust me. It goes crispy like chips and turns a basic salad into something elite. Creamy yoghurt dressing. Fresh crunch from cucumber + lettuce. Golden pasta “croutons” on top. Thanks @tablebymax for the inspo! Save this one 👇 Makes 3–4 serves Ingredients Salad • 250g short pasta (penne, rigatoni or farfalle) • 1–2 tbsp extra-virgin olive oil • Salt & pepper • 1 iceberg or cos lettuce, chopped • 1 punnet cherry tomatoes, halved • ½ small red onion, finely diced • 1 Lebanese cucumber, diced • Handful fresh parsley, finely chopped Dressing • 200g Greek yoghurt • 1 tsp Dijon mustard • 1.5 tbsp lemon juice • 1 tbsp extra-virgin olive oil • ½ tsp garlic powder • Salt and pepper, to taste Optional • Parmesan cheese • Protein of your choosing Method 1.	Cook pasta according to packet instructions. Drain well and let excess moisture evaporate for a few minutes. 2.	Toss pasta with extra-virgin olive oil, salt and pepper. Air fry at 200°C for 15–20 minutes, shaking every 5 minutes, until golden and crunchy. Let cool slightly. 3.	Combine lettuce, cherry tomatoes, red onion, cucumber and parsley. 4.	Whisk dressing ingredients until smooth. 5.	Toss salad with dressing. 6.	Top with crunchy pasta just before serving. Tip: If prepping ahead, keep the dressing and pasta separate so it stays fresh. I added tuna to mine and it was SO filling 👌 If you make it, tag me. And save this for your next easy dinner.
